Well...here we are. Another Monday coming to a close. It's been productive. I picked up some supplies I needed, trimmed some hedges, sunned my tits, made some stinging nettle and dandelion soup (totally medicinal) for dinner and finished Chapter 10 of Patent Leather Gene. You can read the new chapter, titled: Probably Going To Take A Couple Days, here. I'm warning you...it's a short chapter with a big surprise. Well, maybe you won't be so surprised. ANYWAY...once this novel is complete I know I'm going to have more energy to write more involved blog posts. In the mean time, enjoy a couple other new play lists. I put one together for Our Cluckers as well as for Our Fishes. There are lots of other fun things coming up on TKPR, but those things will have to wait for another day. In the meantime, enjoy the recipe for the nettle and dandelion soup I made tonight for dinner. It's a totally medicinal meal...a lovely spring tonic for the lungs, sinus, liver and kidneys.
INGREDIENTS:
1/4 lb fresh tender stinging nettle plant tops washed
1 bunch dandelion greens chopped
juice of 5 fresh lemons
1 large potato cubed
1 medium yellow onion
half a bunch of celery chopped
4 cloves fresh garlic diced
1/4 cup chopped fresh cilantro and parsley
1 tsp white pepper
1 tsp corriander
1 bay leaf
2 T butter
6 to 8 cups water
salt to taste
DIRECTIONS:
In a soup pot put the bay leaf, celery, onion, garlic, butter, potato, white pepper, corriander, water and some salt.
Bring to a boil until the potato is soft. Then add the dandelion, nettles, and lemon juice. Cover and boil until the greens are all soft.
Using an emersion blender blend all ingredients until smooth. Then add the fine chopped cilantro and parsley. Taste for salt and add salt if needed.
Serve hot with fresh biscuits and sour cream garnish.
Below is a picture of the nettles I used to make the soup. Be careful handeling the nettles. I wore leather gloves. Once the nettles are cooked they no longer cause discomfort.
